The present invention relates to a recombinant lipase in which an amino acid having a negatively charged polar side chain or an amino acid having an uncharged polar side chain is bound in the form of a tag to an N-terminal, and relates to a production method for the recombinant lipase in which use is made of recombinant Escherichia coli that has been genetically altered by the recombinant lipase. The lipase can be recovered other than in Escherichia coli, which is to say by secretion in culture liquid, and the lipase recovered via culture liquid can be purified inexpensively, and the lipase can be produced in volume.
