PURPOSE: A temperature control device and method of a fryer are provided to quickly restore the temperature of frying oil lowered instantaneously when putting an object to be fried in the oil. CONSTITUTION: A temperature control device of a fryer comprises a burner part, a pipe part comprising a plurality of pipes connected in parallel to supply gas to the burner part, a valve part(170) which is installed in each pipe of the pipe part and includes a plurality of valves that open and close the passage of gas through the pipes, a temperature sensing part(140) which detects the temperature of frying solvent accommodated in the fryer, and a control part(110) which selectively opens and closes the plurality of valves according to the temperature of frying solvent to control the amount of gas supplied to the burner part.
