PURPOSE: An organic matter disintegrating method using supercritical fluid and a disintegrating apparatus thereof are provided to deliver heat evenly while maintaining a heat transfer medium in a liquid state at a supercritical temperature, and manage a heat tub in an atmospheric pressure state. CONSTITUTION: An organic matter disintegrating method comprises the steps of: pressurizing fluid containing targeted organic matter at a supercritical pressure; supplying the fluid to a heat exchange line(43) passing through a heat transfer medium(5); and making the fluid reach the supercritical temperature by heating the heat transfer medium and heat-exchanging the heat transfer medium with the fluid. The heat transfer medium is a molten metal which is made by melting a metal having a lower melting point than the supercritical temperature of the fluid, and a higher boiling point than the supercritical temperature of the fluid. The fluid is water, and the metal is one between Sn and Pb.
