The oven (1) has cooking chamber (2) which is bounded by walls of a muffle (3). A latent heat accumulator (12) is thermally connected to electronic component of the oven. The latent heat accumulator is formed from a material whose phase transformation lies in the temperature use boundary region of the electronic component for the pyrolysis time duration for an excessive heat-collection during pyrolysis operation. An independent claim is included for method for operating oven.
