The method involves pushing forward a bread loaf placed in an infeed area (2) to a cutting device by a feed device. The cutting device has a swing arm (9) rotatable around a rotary axis (8) and a circular knife (11) placed at the swing arm rotatable around another rotary axis. The latter rotary axis moves inside a cutting cross-section. The circular knife and the swing arm pass through a cutting gap which is formed between the infeed area and a removal area. A strip is made from food-quality plastic material. An independent claim is included for a cutting device with a flange section.
