PPROBLEM TO BE SOLVED: To provide a formulation etc. for iron supplementation or iron enrichment containing heme iron which has no risk of mixing an animal origin virus or the like, has very high safety, has high absorptivity, and is easy to produce. PSOLUTION: The formulation for iron supplementation or iron enrichment contains heme iron derived from cytochrome of filamentous bacteria such as Aspergillus terreus, Aspergillus oryzae, and Aspergillus niger. There are also provided a food composition containing the formulation and a method for producing the formulation including treating cytochrome with a proteolytic enzyme to decompose the cytochrome to prepare heme iron.
