The invention provides a liquid fungus culturing apparatus and liquid fungus culturing method, capable of better performing supply and air exhaust of air inside and outside the tank in the manufacturing process. The liquid fungus culturing apparatus includes: a culture tank, and an aeration device for performing aeration of culture solution in the culture tank, wherein the aeration device has an air pipe for inputting the air to the culture fluid, an exhausting pipe for discharging the air in the culture tank, and a bypass pipe with an opening and closing valve for bypassing the air pipe and the exhausting pipe at the external of the culture tank. The air pipe has a first valve for preventing air flowing during strain inoculating, a second valve for preventing countercurrent of the culture fluid during heating sterilization, and a filter for purification of the inflow air. The exhausting pipe has a pressure gauge, which is provided in a freely knocked-down mode; a third valve and a fourth valve, partitioned with the pressure gauge and configured at both sides of the pressure gauge, and sealing when the pressure gauge is removed.
