A method for denitrification of non-standard amount of nitrates in cabbage, cucumbers, tomatoes with lactic microorganisms includes washing and rinsing vegetables, putting in containers, adding flavoring and greenery, pouring with brine, preliminary fermentation, closing and postfermentation. Additionally a mixture of lactic microorganisms is added into the brine.
