Procedure cationization dry phase of starch from pulses, consisting in the reaction of starch from pulses, in granular or gelatinized with a reactive cation, wherein the reaction is carried out only in the presence of water and total absence of any other solvent compound, under conditions such that the ratio R between the amount of water and the amount of starch from pulses, is between 1/500 and 1/5, meaning that the amount of starch from legume It includes the weight of starch from legume initially used for the cationization reaction, and the weight of water that is intrinsically content, and wherein the cationic starch obtained has a percentage of nitrogen comprised between 0.5 and 1.5 %.
