The present invention relates to a method for producing water-soluble particles from natural extracts using supercritical fluids and antisolvents, and an apparatus for producing water-soluble particles from natural extracts using supercritical fluids and antisolvents. The method of the present invention comprises: a step of forming an extract-supercritical carbon dioxide mixed solution by heating natural extract and liquefied carbon dioxides, and mixing and stirring them; a step of forming extract fine particles by spraying the mixed solution with antisolvents; and a step of separating and collecting the formed extract fine particles and recycling the carbon dioxides and antisolvents.
