The present invention relates to a human sweet taste receptor T1R2 of T1R3 with a deleted transmembrane domain, and an expression and a purification method thereof. According to the present invention, by expressing through a state in which transmembrane domains of the human sweet taste receptor T1R2 of T1R3 are deleted, an increased water solubility of protein not only facilitates the expression and purification but is also advantageous for crystal growth, thereby expected to be very useful in a protein interaction study with sweet-tasting protein and in elucidating a signal transduction mechanism.;COPYRIGHT KIPO 2014
