The present invention relates to a manufacturing method of a functional tea using Salvia plebeia leaves and a functional tea and, more specifically, a manufacturing method of a functional tea using Salvia plebeia leaves having anti-oxidant and anti-inflammatory effects and no cell toxicity, and a functional tea. Also, the present invention relates to a manufacturing method of a functional tea with increased preference using Salvia plebeia leaves by removing the stem of Salvia plebeia and consecutively decreasing roasting temperatures and a functional tea.
