FIELD: chemistry.;SUBSTANCE: invention relates to technology of obtaining selectively permeable ultrafiltration membranes, based on cellulose acetates, and can be used for detention of substances within the range of molecular weight M=(2-10)×104Da from polydispersive liquid mixtures in food industry in the process of separation of whey proteins from secondary raw material, pectins from pectin-containing extracts, for concentration and clarification of fruit and berry juices, beer, wine, drinking and sewage water. Mixture for such membrane formation consists of cellulose acetate, modified by vapour of mixture 90 vol.% of water and 10 vol.% of dimethylsulfoxide, with its content in cellulose acetate from 0.1 to 5 wt %; solvent - acetone and water, with the following ratio of components, wt %: 6.0-8.0 cellulose acetate, modified by vapour of mixture of water and dimethylsulfoxide, 91.0-89.0 acetone and 3.0 water.;EFFECT: invention provides possibility of regulation and increase of membrane selectivity with preservation of its permeability.;5 dwg, 2 ex
