Monitoring a fermentation of a fermentation product, comprises measuring a refractive index of the fermentation product at temporary intervals by means of a refractometer (12), and determining an actual sugar content of the fermentation product based on this measurement. An actual alcohol content is determined from the actual sugar content based on the initial value for the sugar content and creating a proofing curve in this way.
