Preparing and packaging a fruit compote in a packing container, comprises: preparing mashed fruits; heating the mashed fruits at a temperature of 72-82[deg] C for a time period of 10-20 minutes; then cooling the obtained compote at a temperature of below than 50[deg] C; distributing the cooled compote in each packing container; and hermetically sealing each packing container containing the compote. The cooling, distributing, and sealing steps are realized in a hygiene controlled enclosure. Each packing container is made of thermoplastic polymeric synthetic material.
