PROBLEM TO BE SOLVED: To provide a method for increasing various amino acids in soft-shelled turtle flesh, resulting in obtaining soft-shelled turtle flesh with high nutritive value by the increased amino acid, and obtaining soft-shelled turtle flesh with excellent palatability by the increased amino acid in good balance, including serine which affects on sweet taste and umami taste.SOLUTION: A method for increasing amino acid of soft-shelled turtle flesh comprises feeding the feed for soft-shelled turtle, in which the head of mantis shrimp and lactic acid bacteria are added into mixed feed, to a soft-shelled turtle, and increasing one or more kinds of amino acids selected from isoleucine, leucine, lysine, methionine, phenylalanine, histidine, aspartic acid, glutamic acid, arginine, and serine contained in soft-shelled turtle flesh.
