PPROBLEM TO BE SOLVED: To provide a composition and food and drink for promoting biological absorption of a flavonoid which improves the biological absorptivity of quercetin and other flavonoids and is expected to have preventive effects on various diseases by virtue of their antioxidant properties. PSOLUTION: Since a water-soluble viscous dietary fiber such as guar gum, κ-carrageenan, λ-carrageenan, locust bean gum, agar, xanthan gum and gellan gum is recognized to have a high function of promoting biological absorption of a flavonoid, the composition and food and drink having the dietary fiber or both of the dietary fiber and the flavonoid as active ingredients are produced. Common processed food and drink including refreshing beverages, supplements, seasonings, sweet stuffs and side dishes that contain flavonoid may be produced using the dietary fiber and its food additive.
