PROBLEM TO BE SOLVED: To provide a method for easily producing a tea extract containing purified catechins having excellent flavor while eliminating a gallic acid.;SOLUTION: The method for producing the tea extract containing the purified catechins includes: a first step of mixing the tea extract containing catechins, a hydrophilic organic solvent, water and an organic acid salt at the quantitative ratio of forming two phases; and a second step of performing liquid-liquid separation between a phase rich in the hydrophilic organic solvent and a phase rich in the water, and recovering the catechins from the phase rich in the hydrophilic organic solvent.;COPYRIGHT: (C)2012,JPO&INPIT
