The present invention refers to an enzyme with proteolytic activity known as Eap1, which is produced by the Sporisorium reilianum fungus, this enzyme pertaining to the aspartyl protease family and having the following molecular weight biochemical properties: 41kDa, optimum pH: 2.0 a 6.0, optimum temperature: 35°C to 45°C, the enzyme being stable from 12h to 2h at 4°C to 10°C, at pH values of 2.0 to 11.0, and from 1h to 2h at temperatures of 5.0°C to 30.0°C maintaining up to 45% of activity at 35°C to 50°C. The enzyme is sensitive to pepstatin A and may degrade the hemoglobin and albumin at values of acid pH, the values of Km and Vmax over the albumin at a pH of 3 are 0.69 mg/mL and 0.66 Ámol/min respectively. In addition, the invention refers to the production and purification process of the enzyme and the peptide sequence thereof. The present invention is unique, since it describes the aspartyl protease of S. reilianum Eap 1 fungus, which, due to its biochemical characteristics and its amino acid sequence similar to that of other aspartic proteases, has potential biotechnological applications.
