The invention relates to a method for determining the volume filling factor in the mineral phase of osseous biocomponents. According to the invention, the method consists in determining the porosity of a bone sample, determining the dielectric characteristics of the sample, determining the dielectric characteristics of the bone structure phases: i.e. organic phase (collagen) and inorganic phase (hydroxyapatite), by using standard non-porous test samples of collagen and hydroxyapatite and the use of the Bruggeman formula for determining the volume fraction of the inorganic part (hydroxyapatite) of the sample to be assessed.
