AVERRHOA CARAMBOLA EXTRACT AND A METHOD FOR PRODUCING THE EXTRACT

An extract containing an effective amount of a bioactive compound derived from Averrhoacarambola comprising soluble dietary fiber, soluble phenolics, soluble protein, acid-soluble lignin and sugar. The bioactive compound has galactoglucan residues as a major component and has an average molecular weight of about 11992 Da. The bioactive compound enables the extract to act as a cholesterol lowering agent suitable for use in the manufacture of a composition for reducing blood lipid levels. The extract is also suitable to be made into a health supplement or into food and beverage products. A method of producing a therapeutically effective extract derived from Averrhoa carambola of the present invention is also provided.
