The present invention relates to a manufacturing method of bypass protein capable of being intensively digested and absorbed in the small intestine after passing the ruminant stomach of cattle with digestion and absorption suppressed. The soybean oil cake is treated as follows: (1) the soybean oil cake is fermented with lactobacillus in order to convert oligosaccharides in the soybean oil cake into reactive sugar, and (2) the fermented soybean oil cake is treated with heat so as to suppress the digestion and absorption in the ruminant stomach, and maximize the digestion and absorption in the small intestine. The manufacturing process of bypass protein of the present invention allows to effectively produce bypass protein by converting the component of soybean oil cake through fermentation so as to accelerate the Maillard reaction without a separate additive.;COPYRIGHT KIPO 2015
