The present invention relates to a method for preparing extracts of berries and colored potatoes with increased anthocyanin-based pigments by pre-treating pectinex enzymes, and more specifically, to a method for preparing extracts of berries and colored potatoes, wherein the method includes a step of pre-treating berries and colored potatoes with pectinex enzymes and a step of extracting materials treated with the pectinex enzymes using water, alcohol with 1-6 carbon atoms, or its mixture solvent.
