The present invention relates to a manufacturing method of fermented and enzymatically-treated red ginseng, capable of increasing the content of ginsenoside existing in red ginseng by fermenting red ginseng widely used as a health food with yeast and enzymatically treating the red ginseng, to a fermented and enzymatically-treated red ginseng extract manufactured by the manufacturing method; and to a food composition including the same. The manufacturing method of the fermented and enzymatically-treated red ginseng comprises the steps of: inoculating red ginseng with a strain of kazachstania unispora which is a kind of yeast (Saccharomyces); stationarily culturing the red ginseng inoculated with the strain of kazachstania unispora; and enzymatically treating the red ginseng which has been cultured with a pectolytic enzyme.
