The present invention relates to a method for producing a sugar from waste Curcuma longa as biomass, and a method for producing lactic acid and ethanol by fermentation. According to the present invention, in the saccharification process comprising adding sulfuric acid to waste Curcuma longa to perform acid hydrolysis thereon, thereby producing a waste Curcuma longa hydrolysate, or in the separate hydrolysis and fermentation (SHF) process comprising adding, to the waste Curcuma longa hydrolysate, a Lactobacillus sp. or Saccharomyces sp. strain, the initial reducing sugar concentration of a waste Curcuma longa hydrolysate is maximized and the concentration of hydrolysis by-products is minimized, thus the growth of a fermentation strain is not affected, and a sugar, lactic acid or ethanol with a high concentration is produced. The waste Curcuma longa hydrolysate may be effectively used to produce lactic acid and ethanol through the separate hydrolysis and fermentation (SHF) process using waste Curcuma longa as biomass.
