The present invention relates to gamma-dodecelactone (-Dodecelactone) obtained from safflower oil, a method for producing gamma-dodecelactone (-Dodecelactone), and a composition thereof. More specifically, the present invention relates to a method for producing gamma-dodecelactone at a high-yield wherein a fatty acid is generated by treating microbial lipase in an oil, a hydroxy fatty acid is extracted by using stenotrophomonas nitritireducens bacteria, the hydroxy fatty acid is reacted with the yeast Candida boidinii, and gamma-dodecelactone is mass-produced at a high yield through an intracellular beta-oxidation (-Oxidation). The present invention also relates to a method for producing additional gamma-dodecelactone (-Dodecelactone) and a composition thereof. According to the present invention, the production method using microorganisms is more environment-friendly and shows higher specificity than conventional chemical production methods. In addition, it is possible to produce the peach-flavored gamma-dodecelactone at a high yield, which is a raw material of food additives by treating the safflower oil in phases, which can be obtained in large quantities from nature, with microorganism.
