The present invention relates to a powder of acerola cherry fruit and a method of producing the same. The powder comprises 51 to 60 mass% or more of acerola cherry-juice solid and 40 to 49 mass% of oxidized starch. The process comprises preparing a concentrate of acerola cherry-juice, adding the oxidized starch to the concentrate and spray-drying.
