PROBLEM TO BE SOLVED: To provide sponge cake which people who are subjected to dietary restriction such as calorie restriction, and intake restriction of sugar and saccharide, can eat without anxiety, and a production method thereof.;SOLUTION: A production method of sponge cake according to the present invention is characterized in that: konjak refined flour is dissolved in hot water for forming a jelly-like object; the jelly-like object is added to an egg of hen, and one or both of an indigestible sugar sweetener and non-sugar sweetener are added thereto; the mixture is heated in a container which is in hot water and is agitated for forming a foamy object; raw soybean curd refuse is added to the foamy object while being agitated for creating dough; and the dough is poured in a mold and baked.;SELECTED DRAWING: None;COPYRIGHT: (C)2016,JPO&INPIT
