sugar production process from lignocellulosic biomass pretreated with a mixture of hydrated inorganic salts and metal salts. The present invention relates to a process for converting lignocellulosic biomass to sugars comprising at least three steps. The first step is a step of cooking the lignocellulosic biomass in the presence of at least one hydrated inorganic salt in admixture with at least one other metal salt. the second step is a step of separating at least one solid fraction that has undergone the cooking step and the third step is an enzymatic hydrolysis step of that solid fraction to convert polysaccharides to monosaccharides. the sugars thus obtained are then fermentable in alcohols.
