Method for increasing the activity of nitratoreductasa a Staphylococcus strain with activity nitratoreductasa including the steps of a) fermenting the strain in the absence of nitrate under aerobic conditions; b) fermenting the strain under anaerobic or oxygen limited conditions as nitrate is continuously supplied to the fermentation medium; c) optionally granulating and optionally lyophilizing the strain.
