This invention patent relates to a tannery waste recovery process, wherein it comprises the chrome extraction from leather waste, without hydrolyzing, comprising the minimal pH variation. The chrome extraction from leather waste takes place by alkaline means without heating or by acid means with heating and in both processes, the leather is not dissolved on the solution, maintaining a solid state, and co-products generated in this process have value added for industry or agriculture. Leather without chrome and on a solid state, resulting from the acid/alkaline extraction, is a powdered product rich in proteins and amino acids ( 90%), and nitrogen. It is very thin and homogeneous, with a light beige color, odorless, obtained by utilizing a "zero gap" electrolysis and a drying process by atomization / nebulization, using spray dryer equipment, with a high value added for animal nutrition and agriculture; the organic-free (protein) chrome is used as raw material for the industry.
