The present invention relates to a pharmaceutical composition for preventing and treating liver diseases, health functional food for protecting liver comprising a sugar-soaked extract of ultra high pressure-treated bean sprouts as an active ingredient, and a method for extracting ultra high pressure-treated bean sprouts. The ultra high pressure-treated bean sprout extract of the present invention is capable of significantly extracting asparagine in comparison with a general bean sprout extract or bean sprout juice, having a high amount of isoflavone and, particularly, extracted aglycone isoflavone which is easy to be absorbed, and having excellent activation of inhibiting liver damage by peroxide in a HepG2 cell.
