The present invention relates to a method for preparing a bacterial culture of an Amaranth seed, and health supplement food and food additive containing the bacterial culture. More specifically, the present invention relates to a method of preparing a culture containing various digestive enzymes in large amount by inoculating and incubating Aspergillus oryzae after soaking and steaming the Amaranth seed. In addition, the present invention relates to the health supplement food and the food additive, which include the culture to aid digestion, and have a higher content of nutrient. According to the present invention, there can be prepared an Amaranthus bacterial culture having intrinsic nutritional benefits of the Amaranthus seed, containing a large amount of enzymes, such as amylase, protease, lipase, and cellulose, to aid the digestion of food, and having a higher content of amino acids. In addition, the culture is provided in the form of the health supplement food or the food additive, thereby preparing foods which represent superior nutritional values and aid digestion, which is advantageous to health.;COPYRIGHT KIPO 2016
