The present invention relates to a novel process for extracting and purifying glucosinolates from plants, preferably from broccoli sprouts or seeds. The alcohol extract is adsorbed onto the basic resin and eluted with ammonia. Optionally, prior to the adsorption / elution step, the alcohol extract is passed through an ion-exchange column containing an acidic resin.
