The invention relates to a method for the optical temperature determination of a molten metal with a measuring device comprising - an optical waveguide for guiding electromagnetic radiation emitted by the metal or the tip of the optical waveguide to an optical detector, - at least one spare optical waveguide, - an optical detector for the determination the temperature of the metal from an analysis of the electromagnetic radiation, - a measuring chain, in which the optical waveguide is the Meßgrößenaufnehmer, at least one spare measuring chain, in which a spare optical fiber is the Meßgrößenaufnehmer. The calibration of the replacement measuring chain is carried out by means of the measuring chain as system-internal standard. The invention further relates to an unwinding device for carrying out such a method. The unwinding device has a conveying device for successively unwinding the optical waveguide from a supply and the replacement optical waveguide from a substitute supply. Furthermore, the unwinding device has a receiving device for a stock and at least one spare stock.
