A method of cultivating and harvesting herbaceous plants of the genus Valeriartella, wherein:herbaceous plants (V) of the genus Valeriartella are grown in planks,the herbaceous plants (V) are collected in a mechanized manner, by means of a machine (M) having a cutting means (3) ensuring the cutting of the plants as the machine advances along the board, and the cutting height (hc) is adjusted above the collar of the herbaceous plants (V) and in such a way as to cut the herbaceous plants, at the petiole, and so as to obtain free leaves (Fl), that is, that is, not linked together by their collar.
