PROBLEM TO BE SOLVED: To provide an electromagnetic induction heating fryer using high voltage, which cooks food by using high voltage while raising the temperature to a specific temperature by means of an electromagnetic induction heating method.;SOLUTION: The electromagnetic induction heating fryer using high voltage comprises: a case including an open upper part; an openable and closable lid 200; a frying vessel 300 having polarity to allow high frequency waves to flow in when frying food, and installed in the case; a frying basket 400 installed to be lifted/lowered and having polarity to apply the high frequency wave; an induction heating unit installed around the outer circumferential surface of the frying vessel; a plurality of lifting/lowering units; and a control unit 700 controlling the induction heating unit by controlling the high voltage applied to the frying basket so as to eliminate moisture contained in frying oil. Oxidation of the frying oil is restricted by supplying high frequency voltage into the frying vessel and accelerating the evaporation of moisture contained in the frying oil, and acidification of the oil is prevented, so the smell of oil contained in the fried food is prevented while lengthening the usable lifetime of the oil.;SELECTED DRAWING: Figure 4;COPYRIGHT: (C)2017,JPO&INPIT
