PROBLEM TO BE SOLVED: To provide a method for collecting and preserving a grape sap.SOLUTION: A grape sap is extracted in the following order: selecting a grape branch which is grown to bear only 1-3 bunches on one branch; harvesting mature fruits on the selected branch; followed by absorbing a nutrient from roots and leaves until defoliation stage; and pruning branches while leaving a part required for the bud of the next year after defoliation; washing the grape branches pruned to cut down; peeling off epidermis of the branches after washing; cutting the branches whose epidermis is peeled off to make pieces of branches with a length of 5 cm or less; soaking the pieces of branches into water of alcohol to extract sap from the cut ends.
