PROBLEM TO BE SOLVED: To provide a novel method for promoting gelation of gellan gum, and a method for producing gel.;SOLUTION: Provided are: a method of gelation by promoting the gelation by pressure treating the dispersion in which gellan gum is dispersed, and then by cooling; a method of production in which the dispersion contains a potassium salt or a calcium salt, the dispersion in which gellan gum is dispersed is pressure treated, and the dispersion is not heated before pressure treating; and a method in which the dispersion is not heated at 90°C or more before pressure treating, and pressure treated with a pressure of 10 MPa or more.;SELECTED DRAWING: None;COPYRIGHT: (C)2017,JPO&INPIT
