An enzymatically produced soluble α-glucan fiber composition suitable for use as a digestion resistant fiber in food and feed applications is provided. The soluble α-glucan fiber composition may be mixed with one or more additional food ingredients to produce fiber-containing compositions. Also provided are methods of producing and using compositions comprising soluble α-glucan fiber.
