The present invention relates to a method of extracting aroma constituents from warm temperate zone forest tree species at the optimum yield and an extract from the warm temperate zone forest tree species. In the present invention, a warm temperate zone forest tree species such as camellia and Eurya japonica is extracted using methanol and then the filtrate is divided using hexane. As a result, an extract containing a large amount of eco-friendly aroma constituents which is harmless and has great scent is obtained at the optimum yield. Also, the present invention can be developed as a regional product of a region which have a large number of warm temperate zone forest tree species, increasing the incomes of the local residents.
