The present invention relates to a sushi type wild cultivated ginseng rice by using a wild cultivated ginseng including various functional ingredients that are healthful for a human body and a by-product of the wild cultivated ginseng. More particularly, the present invention relates to a wild cultivated ginseng rice, in which a by-product powder of the wild cultivated ginseng prepared by powdering a wild cultivated ginseng leaf that is a by-product of the wild cultivated ginseng and a wild cultivated ginseng fruit, and a sliced wild cultivated ginseng (or a wild cultivated ginseng root) are sequentially stacked on an upper portion of an underlying rice prepared by mixing a kelp and an extract of a wild cultivated ginseng leaf to make a stacked material, and then the stacked material is surrounded by the blanched wild cultivated ginseng leaf, and a method of manufacturing a wild cultivated ginseng rice. The present invention may have effects in which nutritional ingredients are taken from the sushi shaped underlying rice because the underlying rice includes kelp broth and the extract of the wild cultivated ginseng leaf, healthful nutritional ingredients are further taken from the by-product powder of the wild cultivated ginseng and the wild cultivated ginseng leaf, which are sequentially stacked on the upper portion of the underlying rice, and, when jerusalem artichokes are added to the by-product powder of the wild cultivated ginseng, which includes the wild cultivated ginseng leaf and the wild cultivated ginseng fruit that are the by-products of the wild cultivated ginseng, own bitter taste of the wild cultivated ginseng is slightly relieved to enhance the taste.;COPYRIGHT KIPO 2017
