The present invention relates to a producing method of an agar from sea string and, more specifically, to a method for efficiently producing an agar with gel strength extracted from raw sea string using alkali immersion and microwave dehydration processes. The producing method of the agar extracted from the sea string using the alkali immersion and microwave dehydration processes comprises: an alkali immersion step of immersing a sea string in alkali solution; an extraction step of extracting a sea string extract by applying heat to the alkali solution immersed with the sea string; a gel formation step of forming gel from the sea string extract; a microwave dehydrating step of defrosting and dehydrating the gel by freezing the gel after the gel is frozen; and a drying step of washing and drying the dehydrated gel in the microwave dehydrating step.;COPYRIGHT KIPO 2017
