The present invention relates to an anti-oxidant composition comprising a Pachyrhizus erosus root bark extract, a hexane fraction thereof, an ethyl acetate fraction, or a mixture of the same fractions, and a food composition, a cosmetic material composition, a feed composition, and a health functional food which comprise the same. The Pachyrhizus erosus root bark extract and the fractions thereof of the present invention can be obtained by performing extraction with various solvents such as water, spirits, methanol, ethanol, etc. and sequentially performing fractionation of the extracts by using organic solvents. The Pachyrhizus erosus root bark extract and the fractions thereof exhibit excellent anti-oxidation activity similar to vitamin C, have excellent thermal stability and do not loose activity even in an acid condition of pH 2 and in plasma. Therefore, the Pachyrhizus erosus root bark extract and the fractions thereof can be processed into various types such as an extract liquid, a cream, powder, a pill, a tablet, and so on.
