The present invention relates to a method for adsorbing whey protein using pine bark and pine bark-derived polyphenols. According to the present invention, pine bark and proanthocyanidins (PAs) which are main components of pine bark can be selectively adsorbed with whey protein, thereby enabling production of PAs-whey protein composites or pine bark-whey protein composites at an adsorption temperature of 0-50°C for 2-12 hours for adsorption.
