The present invention provides a method for producing digestion-resistant starch having improved processability, wherein the method comprises the following steps: preparing a suspension of modified starch modified by cross-linking; and heating the suspension of the modified starch at a temperature of 75-80°C for 10-30 minutes. RS 4-type digestion-resistant starch produced according to the method of the present invention has a high total edible fiber content of 60% or higher and a high moisture absorbing rate of 170% or higher, so processability such as a dough forming function is improved. Moreover, when RS 4-type digestion-resistant starch is mass-produced by using the method of the present invention, a heating condition can be easily controlled, so variation of qualities between products is minimized.;COPYRIGHT KIPO 2017
