The present invention relates to a method for the reactive extrusion of compositions containing at least one amylaceous material and another component selected from a comprehensive list, said extrusion taking place in the presence of at least one cross-linking agent and at least one solvent and/or plasticizer. Advantageously, the method according to the invention makes it possible to control the competition between the destructuring and the cross-linking of the starch. Said method therefore makes it possible to obtain compositions made of cross-linked starches with residual crystalline phase levels that can be adjusted in order to ideally meet the specific needs of the different end applications.
