PROBLEM TO BE SOLVED: To provide a mastication ability estimation device, mastication ability estimation method and program capable of simply estimating mastication ability with preferable accuracy.;SOLUTION: A mastication ability estimation device estimates the mastication ability of a subject on the basis of the surface area of a plurality of bitten pieces F obtained by making the subject masticate a gummy jelly containing carotene pigment (β-carotene). The mastication ability estimation device calculates a feature amount including the region area and the estimation height of each bitten piece F of the plurality of bitten pieces F on the basis of color information (RGB data or the like) of a picked-up image P1 (including a standardized image P2 and an extraction image P3) obtained by causing imaging means to image the plurality of bitten pieces F.
