PROBLEM TO BE SOLVED: To provide a method of producing a polyester fiber fabric for vehicle interior materials which provides a vehicle interior material having sufficient fire retardancy while preventing occurrence of water marks by hot water or an aqueous solution of calcium chloride and a fire-retardant vehicle interior material.SOLUTION: A method of producing a polyester fiber fabric for vehicle interior materials includes a step of applying, to a polyester fiber fabric, a treatment solution containing an aqueous flame-retardant processing agent prepared by dissolving or dispersing a salt of an alkylphosphonic acid with a guanidine-based compound in water and a step of drying the fabric obtained by the treatment solution application step.
