The compositions and methods comprise genetically encoding and expressing a novel delta-9 desaturase in plant cells. In some embodiments, a method of expressing a nucleic acid in a plant cell to exploit the activity of a delta-9 desaturase enzyme, thereby reducing the composition percentage of saturated fatty acids in plant seeds and concomitantly increasing 9 fatty acids. In another embodiment, the amino acid sequence has a delta-9 desaturase activity. The method may involve expressing a delta-9 desaturase in plant cells, plant material, and whole plants with the aim of increasing the amount of monounsaturated fatty acids in whole plants, plant seeds, and plant material, for example seeds.
